It is highly recommended to use copper or real zinc flashing. You can save a few dollars downgrading to coated metals, but the savings is marginal because labor is more than materials. You don't want a 100 to 200 year roof with 25 or 30 year flashing. Plus, a good slate roofer will probably insist on copper if he is providing a warranty.
